Job Description and Duties

The Fortuna CCC Campus is the largest in the state, employing traditional program corpsmembers, Americorps Backcountry Trails, and Americorps Watershed Stewards Program members. 

Under the direction of the Administrative Officer at the Fortuna Center, the Supervising Cook is responsible for leading and supervising all functions related to corpsmember training and development, management, and operations of the culinary program at the Fortuna CCC.

Plan, organize, train, and direct the work of the Civil Service Cook, and the culinary program Corpsmembers in training.  Responsible for supervision of all culinary staff, kitchen area and food preparation for three meals a day; implement food service preparation, inspection, sanitation, safety and health standards; daily inspection of kitchen and other work areas to ensure compliance with appropriate Health and Safety regulations.

Develop and plan daily, weekly and monthly menus; coordinate food preparation including ethnic diversity and dietary restrictions at 80% or higher scratch-cooked.  Ensure all meals are appealing, served timely in sanitary conditions; maintain proper food inventory for up to two weeks; coordinate with project staff on spike meals, special projects/occasions and monthly banquets.

Monitor food service budget and stay within designated budget; maintain and update monthly food reports on meals, inventory and quarterly vendor price quotes; order kitchen and cleaning supplies; maintain professional line of communication with vendors and coordinate deliveries; follow State and CCC guidelines when purchasing food and equipment items.

Working Conditions

This position reports to the Fortuna Center located at 1500 Alamar Way, Fortuna, CA 95540.


Special Requirements

A medical clearance examination is required to be appointed to this position.
